This week I’m writing to you from Pennsylvania, where I’ve been spending time with my family at home. My mom is possibly an even bigger fan of Halloween than I am, and the house is absolutely brimming with every Halloween-themed décor item that you could think of. Throw pillows, real pumpkins, fake pumpkins, bats, ghosts and ghouls are covering every square inch of our house! It’s really gotten me more excited for the holiday. Her obsession doesn’t stop there, though: as soon as I got home, we got to work on our very favorite tradition: baking as many pumpkin-flavored things as we can.
The old standby at our house is the ever-popular pumpkin cookie. Here’s a pretty simple recipe courtesy of my homegirl Betty Crocker:
Simple Pumpkin Cookies
2/3 cup granulated sugar
2/3 cup packed brown sugar
¾ cup butter or margarine, softened
1 teaspoon vanilla
½ cup (from 15-oz can) pumpkin (not pumpkin pie mix)
2 1/4 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
- Heat oven to 375°F. In large bowl, beat granulated sugar, brown sugar, 3/4 cup butter and 1 teaspoon vanilla with electric mixer on medium speed, scraping bowl occasionally, until well blended. Beat in pumpkin and eggs until well mixed. On low speed, beat in flour, baking soda, cinnamon and salt.
- On ungreased cookie sheets, drop dough by heaping tablespoonfuls.
- Bake 10 to 12 minutes or until almost no indentation remains when touched in center. Immediately remove from cookie sheets to cooling rack. Cool completely, about 45 minutes.
Side note: I need new cookie sheets. Yikes.
I’m not a huge fan of the brown butter icing that they included in this recipe so I’ve left it out in favor of my personal favorite: cream cheese icing! I am a bit lazy, admittedly, and was so eager to decorate these that I purchased a can of icing and some extremely adorable Halloween sprinkles at Target. No regrets.
All right, I can hear you asking: where’s the crochet, Lindsay? Don’t worry, I haven’t forsaken you in favor of themed holiday cookie baking, though I can’t make any promises for what’s going to happen around Christmas time…
